Libera Terra Organic Siccagno Tomato Passata is made with tomatoes cultivated in dry farming conditions in open field in Palermo hilly hinterland. Once the perfect ripeness is reached, tomatoes are hand-harvested in several moments from July to October. Then, they are processed without adding any other ingredients.
Libera Terra Organic Whole Peeled Tomatoes are cultivated on the ground and open air in the Palermo hilly hinterland. When tomatoes reach the optimal ripeness degree, they are hand-harvested in several moments from July to September. Then tomatoes are peeled and put as whole-shape in the jar with their own juice without adding any other ingredients.
Libera Terra Apulian «Pomodorni» are cultivated in the Alto Salento, a few kilometers from the seaside. Pomodorini are planted between March and April and hand-harvested in July. Once gathered, the tomatoes are processed according to the local tradition. Thus, they are split and salted by hand, laid on nets and left out to softly dry under the Apulian sun summer Seasoned with herbs and preserved in olive oil.
