"Woidstoin" is Lower Bavarian, the name says it all. This is about transferring conventional tunnel recipes to what grows and thrives in the Bavarian Forest or at its southern end - the location of the WAGNER organic bakery. The main ingredient is spelled flour, which combines with hay milk and butter to form a wonderfully dense stollen. Each bite tastes a little different: sometimes nutty after whale or hazelnuts, sometimes fruity after cherries, blueberries or aronia berries. And to make it even more exciting, the fruits were placed in gin before baking. The Woidstoin tastes wonderfully juicy, the light acidity of the fruit creates the perfect contrast to the sparingly used sugar. This gallery is a masterpiece of bio-regional, creative bakery art.
