Ageing: - After de-stemming the grapes ferment from spontaneus yeast in stainless tanks. for two daily pumping over at a controlled temperature of 22°C and 10 days of maceration. Few replacement with a lot of oxygen in order not to over-extract and immediately combain anthocyanins and tannins ferment for 7 days. We keep fruit without too many tannis.
Refining: - After racking and subsequent malolactic fermentation the wine is kept at lees 18 months in a French oak barrigues of second hand before being bottled.

Serving temperature: serve at 18-20°C, uncork half an hour before serving.
