CIOKARRUA COMPANY HISTORY
Since many years, Ciokarrua work hard on the commercialization and promotion of
one of the most representative fruit of the Ragusa area: the carob. The company is the most
important producer of carob products: the carob pulp extract, the carob pulp flour, the carob
seeds flour, the carob cookies and the carob candies. Delicacies that allow to revalue the
amazing properties of this ancient fruit.
In addition to the carob products, Ciokarrua is specialized in the production of chocolate which
became one of the key factor of Modica. At the beginning, people used to drink the chocolate: it
was called the “divinity nectar ”.. The cold processing and the “metate", a M aya stone tool, both
introduced by conquistadores, let the chocolate to be processed in a very unique way. At a later
time, peo ple added the sugar. Using the “metate ””, the sugar can’t melt completely and the
chocolate maintains the healthy substances, like fl avonoids. No conching process. Organoleptic
features are maintained thanks to the tempering process.

Ciokarrua, holder of the genuineness of the traditional products of Modica, is proud to i ntroduce a
special selection of organic chocolate . The aim of the project is to exalt the high quality patrimony
of tastes and smells of Sicily. Ciokarrua proposes four organic variations of the traditional
chocolate bar, employing the characteristic cold process, according to the procedural guideline.
Natural row materials, natural creative genius: this i s how Ciokarrua makes memory very sweet.
Fifity grams of natural delight. This organic chocolate is perfect for consume rs who love the
authentic traditional tastes and who are careful about the environment and the health. Ciokarrua
organic chocolate can be also drunk according to a past use melting a portion of the bar in a
cup of water or milk.
CARRUBATO ORGANIC BARS
Carrubato is the new Ciokarrua bar with no cocoa . It's born from the heart of Ciokarrua and from
its passion for the carob, the most representative fruit of Ragusa countryside. The organic flour of
carob pulp is joined together with organic cocoa butter and the natural flavours of Sicily. These
in gredients create an amazing and pure and unique bar.
