About the farm
The farm is located in “Villa Zottopera”, that is the manor, that has belonged to the present owners (the family of the barons Rosso-Cosenza) for more 4 centuries.
In the farm there is a warehouse for the storage of olive oil with stone tanks dating from the enth century DC (the only of Sicily) - you can see on my web zottopera.it
Labels are printed on the coats of arms of the family Rosso Cosenza.
The farm is surrounded by the rich countryside of Chiaramonte Gulfi township,
The oil, extracted by olives produced by 400-500 years old olive trees (fews of 900 years old),
is greatly appreciated by “high level gourmets”. It is a few years that the owners have adopted the biological ways of cultivation. This change gave birth to the “Azienda Villa Zottopera” that is specialized in producing biological awarded olive oils, sold on specialized markets,
thanks to the fine way of collecting and of conservation of the final product.
Why Zottopera olive oil is the best olive oil and why it is better than other brands ?
There are three main factors:
1) The cultivar that is the type of olive - the Tonda Iblea , variety that only grows in Chiaramonte Gulfi (RG), which produces a scent and flavor of green tomatoes.
2) The territory or land (terroir as the French say!) Which gives the smells deep, unique and unrepeatable, I noticed that shifting just 1 km from the taste of the oil change!
3) The age of olive trees: centuries-old, who, with their deep roots can capture the rarest substances underground.
4) The passion and expertise that allows us to select secular oils making of the Grand Cru.
