The D' ANGELO PASTA is produced in a cold rolling process.
A dough is kneaded from durum wheat semolina and water,
which is then fed into the machine by rollers.
We particularly mention this circumstance, as rolled noodles do not have a very high temperature.
In this way the dough gets a rather rough surface and the sauces adhere to it very well.
In addition, more minerals remain in the dough during this process and the particularly high bite
strength (al dente) and extremely stable boiling strength are also a result of this mechanical rolling.
Comparison: Spaghetti, Spirelli, Penne etc. are driven with a screw press into an extruder, which
produces the desired shape by means of the used tools.
This results in quite high temperatures at the extruder outlet, which have a direct influence on the
surface of the pasta.

mill near Florence in the specifications prescribed for us is being prepared.

however, it is recommended to consume quickly (within a few days).

After the cooking process, a pack of prepared D' ANGELO PASTA
results in a cooking weight of approx. 450g.
