Cold Swelling (also called pre-gel) starch is pre-cooked and dried on a steam-heated drum, then ground into a powder and sieved. Therefore it swells and creates viscosity in cold water. Cold-Swelling starch can be used in food processes where heat is not applied or heating is too intensive for native starches and the starch must be applied after heating.
