Our company is focused on making quality products using einkorn as our main ingredient. Einkorn is a wild wheat variety and one of man’s oldest foods – the ancestor of wheat. Until recently only archaeologists were interested in it. Einkorn is a graminaceous plant that belongs to the family Poaceae, Triticum species, Triticum Monococcum subspecies.
In the past the crop was greatly used by the masses, however in the beginning of the 20th century it was gradually replaced by conventional wheat, as it allowed for higher yields. It is the only grain that lacks human selection. That is why einkorn is so valuable – the nutritional qualities of its grains have remained unchanged for centuries.
This product is a reinvention of the traditional cracker. The main ingredient is wholegrain einkorn flour (70%) which has a very low percentage of gluten. It also has sesame and poppy seeds within the dough to enrich the flavor. Also we have used muscovado, as it is unrefined and therefore keeps the product more natural.
The product has only traces of gluten due to the variety of einkorn used. However the biggest benefit of einkorn as a grain is that it is resistant to chemicals and so no chemical are used in its cultivation. This makes our product as natural as it could be. Our choice of oil is high-oleic sunflower oil and we have chosen it because it is rich in Omega 9 and also it has a high burning point which we do not reach in our production. Because of this we can be sure that there are no carcinogenic elements in our product.
We currently offer two varieties of this product: Einkorn Crackers natural and Einkorn Crackers with herbs
