Purple Wheat (PurPur®) was discovered in 1872 alongside the Red Sea, but very likely its origin lies in today's Ethiopia. The grain can be compared to normal wheat as far as its uses are concerned, because it is so versatile. Purple Wheat® contains anthocyanins (flavonoid pigments). These plant pigments are anti-oxidative. They are said to help prevent cancer and lower cholesterol levels. The anthocyanins are responsible for the purple tone in the fine colour of this ancient grain. Since they are mainly located in the skin of the grain, they make flakes especially attractive and cause the stark contrast between dark skin and light core.
