Biolevante is one of the very few family companies which can count on the entire olive oil manufacturing process, from cultivation to packaging of the product, through harvest and production, with full respect to tradition and modernity.
Once the olives are harvested, production becomes a mission: the delivery of the fruits into the collection tanks starts up the manufacturing process, with the initial cleaning of the olives passing on selection rollers, which are able to eliminate impurities such as leaves or branches. Afterwards, the olives are washed to remove further impurities and are finally ready for pressing, hence the term “olive-press”. The olives arrive at the large transfer tanks, where two big granite wheels grind pulp and pits according to olive-oil producing tradition. The continuous movement and the stirring up of paste are crucial to the start of the kneading phase. Small oil droplets are compacted right inside the kneader. The continuous cycle, such as that created by Biolevante, takes place entirely cold, that is, at a constantly controlled and monitored temperature. A company analysis team constantly certifies the productive work.
And finally here is the stage of pressing or separation, where the product is broken down into its three main components: oil, vegetation water and pomace. The flowing of the separated elements passes through the large decanter, which is able to break down the elements and represents the first stage of the production cycle.
