Drying fruits and vegetables is one of the oldest methods of preserving food. It can be viewed as an alternative to canning or freezing.
Drying is basically the process of removing the moisture from the food. The whole process is carried out in compliance with hygiene and sanitary norms. Drying allows preserving 80-90% of vitamins and bioactive substances in fruits and vegetables. Besides, the absence of moisture prevents the growth of bacteria and mold. The product itself becomes smaller (3-4 times) and lighter in weight (5-9 times). However, it can be reconstituted by simple soaking: it regains its color, natural aroma and taste.
Fruits and vegetables can be dried in the sun, in an oven or in a food dehydrator by using the right combination of warm temperatures, low humidity and air current. We use only the natural sun drying method.
