Our small artisan pasta factory refers to that tradition, using for the production only the best durum wheat semolina, made from Apulian wheat rarely mixed with durum wheat semolina coming from other areas, but always of the same quality standard.
We knead using a little bit of purified water and extrude the dough only with bronze dies to obtain the typical rough texture.
Our secret, the same of the old masters, is the drying temperature: 37/38 degrees. It 's the temperature of the human body, the sun of Apulia, of our dryers that depending on the cuts air dry the Pasta for 18 up to 72 hours, gently caressing it with controlled ventilation. Thus the fermentation and acidification are more accurate, starches do not gelatinize and amino acids (such as lysine and tryptophan) remains intact. The result is a fragrant, porous and flavorful product, which expand when cooked, maintains its beautiful shape, gives abundant and creamy starch and is ideal for holding condiments; great taste with the benefit of lightness and digestibility.
