THE ORIGIN, PROJECT AND MISSION OF PISTACHOS ECOLÓGICOS IBÉRICOS
The only pistachio producers in the world with a Demeter Certification
In the interior plateau region of the Iberian Peninsula, located in the northeastern part of the province of Albacete –SPAIN-, our entity PISTACHOS ECOLOGICOS IBERICOS was pioneer in announcing and cultivating biologically integrated pistachios (Pistacia vera); an agronomic crop lost and unknown since the days of the Arab presence in the Iberian Peninsula.
Since some years ago we had been looking for a REAL biologically integrated alternative crop that would also be ENVIRONMENTALLY sustainable to the traditional crops of dry land farming of the interior peninsular plateau (such as vineyards, almonds, plums, olives and cereals) not artificially maintained with national subsidies or those from the European Union, nor economically intervened by the government of the day). Instead an agricultural product worthwhile with a growing market with a real demand.
MISION: BIOLOGICALLY INTEGRATED CROP
Our pistachios are a differentiated product, biologically integrated, which we produce and commercialize under certain strict parameters, which we refer to as Organic Excellence, making our product globally unique. Not only because of the organoleptic properties of our pistachios but also because of the most absolute respect for the environment and the preservation of the natural Iberian landscape.

All our production comes from organic farming; with official certification from the Spanish Organic Agricultural Committee CAAE (Comité de Agricultura Ecológica).
We work exclusively with the KERMAN and KASTEL varieties, without a doubt the best due to their organoleptic and gastronomic qualities.
Traditional dry land
The farming is done in strict traditional non-irrigated land; with the double objective of maintaining and highlighting the organoleptic and nutritional qualities of the fruit as well as preserving the water reserves of the region, which are so limited and scarce in the Iberian central plateau.
Our crop comes from pistachios grafted on Pistacia terebinthus (Cornicabra, Terebinto); a small bush / tree indigenous to the region; which helps to preserve native iberian species and to the potential vegetation cover regeneration in case of any eventuality with the crop.
This wild and rustic specie also gives the kernel a very particular pine nutty flavour (a pine nut aftertaste – the nut of the Pinus pinea-). This is due to the resins and turpentines dragged and provided by the Pistacia terebinthus plant which boost and enhance its particular flavour.
Botanical-forestry restoration of boundary hedges and the natural surroundings of the farm
Recovery and restoration of the hedges, boundaries and copse in the fields with indigenous species of Iberian forestry, which act as refuge for beneficial fauna, in this way favoring the biological battle and natural plague controls in the cultivation.
This botanical regeneration favours both the landscape diversification and improves the biological connectivity, such as the biodiversity of the farm.
