Sake is an alcoholic beverage made from rice. Its alcohol content is similar or slightly higher to wines, with about 15 to 17 percent. Sake making mainly depends on its fermentation, and that is extremely elaborate and complex process despite the fact that sake is only made from simple raw ingredients such as rice and water. Mitoku’s producer may well be a small-scale brewery but they are proud of making a premium fine organic sake. As the founder’s own words say it all – “If it isn’t dry, it isn’t sake”, their sake is mostly dry. Their sake is also well-balanced with umami, koku (richness) and mellow flavour coming from the organic rice. In Mitoku’s organic sake, you will find sake that is very refreshing to drink.
