Core of the business is the making of gluten-free products, all based on corn and rice flour, both raw materials without gluten. After a long and exhaustive study aimed at analyzing request, offer and need of the gluten-free market, the company decided to launch its “gluten-free” project to satisfy both the needs of people affected by celiac disease and those who prefer eating healthy and equilibrate. This project has led the company to build a modern pasta factory in the industrial area of Gravina in Puglia (BA), located on the Murgia plateau. Our plant is the only one in Europe to include a pasta factory and a mill destined to the exclusive production of gluten-free foods: Corn and Rice Pasta.
This process avoids any cross-contamination. Supported by an important commercial partner like the Bühler Group and using the most advanced industrial technologies, today the company has availability of a modern plant that produces high quality gluten-free corn and rice pasta, quite similar to durum wheat pasta in terms of taste, solidity and cooking duration.

The Quality System primarily includes the control of the raw materials (origin, absence of gluten, GMO, allergens and pollutants, regular microbiologic analysis); secondary, the production systematic control through chemical and microbiologic analysis on the intermediate product; finally, the control on the finished product by checking any possible gluten remain, organoleptic evaluation and the control of the right fastening for the food packages.
